The barbers are a way for you to adjust your character's appearance. You can change your character's hair and makeup here.
Barbers are accessible at any barbers chair - simply walk up to the chair and hold G (default) to enter the menu. You will not be charged until you confirm your changes. You will notice that your current configuration will be loaded upon entering the menu.
Hair styles and colors are separated for ease of use so worry not about matching your hair and beard colors! It is as easy as choosing the same index.
You can also opt into having stubble, both the head hair and beard hair can be chosen as stubble. You can also have stubble with a hair style if you think it looks good!
